chimichurri sauce

I’d call this a frugal recipe because it uses pantry ingredients and the two cheapest fresh herbs at the grocery store: parsley and cilantro!

This chimichurri is easy, but super, super flavorful. Use it on grilled steak, but it would also be good on chicken, pork, or toss a few tablespoons in with potato salad.




Chimichurri Sauce

Ingredients

  • 1/2 cup fresh parsley (about 1 handful)
  • 1/2 cup fresh cilantro (about 1 handful)
  • 1/4 cup diced onion
  • 2 garlic cloves, chopped
  • 1 tbsp fresh lime juice
  • 1 tsp apple cider vinegar (or any vinegar)
  • pinch of salt
  • 1/4 cup olive oil

Directions

  1. Add all ingredients except the olive oil to a food processor (I used a small one). Pulse and blend until it's well combined. Scrape down the sides if needed.
  2. Pour in the olive oil and pulse until blended and creamy-looking.
  3. Serve immediately and store the remainder in the fridge (sealed) for up to 3 days.
